Classic French Cheese Omelette

Method

  1. Crack the eggs into a bowl, add the milk, salt, and pepper, and whisk energetically for about 30 seconds until the yolks and whites are completely blended with no clear streaks.

  2. Set an 8-inch nonstick skillet over medium-low heat and add the butter, swirling it around as it melts so it foams gently without turning brown.

  3. Once the foam subsides but before the butter colors, pour in the eggs all at once.

  4. Let the eggs sit for about 5 seconds, then use a silicone spatula to stir them slowly in small circles while shaking the pan, which creates soft curds and keeps the omelette tender.

  5. When the eggs are mostly set but the surface still looks a little wet and glossy, stop stirring and smooth the top into an even layer.

  6. Sprinkle the cheese in a line down the center and let it sit for 20 seconds to start melting.

  7. Tilt the pan away from you and use the spatula to fold the near edge of the omelette over the cheese toward the middle.

  8. Gently roll or fold the far side over as well so you have a neat cylinder, then let it rest seam-side down for 10 seconds to seal.

  9. Slide the omelette onto a warm plate, using the pan to help it roll over so the smooth side faces up.

  10. Scatter the chives over the top and serve immediately while the center is still soft and the cheese is melty.

  • Keep the heat low and be patient; high heat browns and toughens the eggs, while gentle heat keeps them pale and custardy.
  • A nonstick pan and a soft silicone spatula make folding and sliding the omelette far easier for beginners.
